
Oma's Sunday Apple Cake

Oma was known for keeping a cake on the counter for anyone who happened to stop by. This simple apple cake was especially popular in the fall, when the kitchen was full of apples and the house smelled like cinnamon.
INGREDIENTS
2 cups all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
1 teaspoon cinnamon
½ cup unsalted butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
½ cup milk
2 medium apples, peeled and thinly sliced
FOR THE TOPPING
2 tablespoons brown sugar
½ teaspoon cinnamon
2 tablespoons chopped walnuts
DIRECTIONS
Preheat oven to 350°F. Grease a 9-inch round cake pan.
Whisk together the flour, baking powder, salt, and cinnamon.
In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla.
Add the dry ingredients alternately with the milk, mixing just until combined.
Fold in half of the sliced apples and spread the batter into the prepared pan.
Arrange the remaining apples over the top.
Mix the brown sugar, cinnamon, and walnuts together and sprinkle over the apples.
Bake for 40–45 minutes, until golden and a toothpick inserted in the center comes out clean.
Let cool for 10 minutes before serving.
NOTES
Best served slightly warm with coffee. Oma would have approved of a little whipped cream on the side.
